Can You Please Pass the Beetroot Dip? | Beetroot Hummus Recipie
I've never classed myself as much of a cook, I can make a mean feta pesto chicken, but thats about the extent of my skills. That is why, when I started this wee business, I purchased all of my dips and spreads ready made. Now though, I'm a little more adventurous and believe in my skills a bit more. Mainly this is all down to a little Beetroot Hummus fella that everyone seems to love!
I totally winged the recipe, but constantly get great feedback on it, so thought I would share!
P.S this makes heaps, so get ready for some serious dipping!
- 2 cups of drained chickpeas (save the liquid)
- 1 large lemon
- 2 garlic cloves
- 1/4 cup extra virgin Olive Oil
- 4 medium sized roasted beetroot
- Salt and pepper to taste
Place all of the ingredients in the food processor, begin to process. Add chickpea liquid when the hummus requires. You are aiming to create a dip with a smooth consistency.
Adjust lemon, salt and pepper to your liking.
Pretty simple huh? This Hummus has a beautiful dark colour and tastes so vividly of Beetroot! You'll never go back to store bought again, especially when you can whip this up in 5 minutes!
